Continuing the baking drive this weekend, I made this apple cake while my oatmeal loaf was rising.
It is now that time of year where we can’t move for being offered apples from friends’ trees, which is no bad thing as I love baking with apples, planned for the coming weeks are an apple pan dowdy and an apple and blackberry pie (the blackberries having been picked a couple of weeks ago and in my freezer waiting for the apples).
This apple cake was for coffee with the boyfriend’s parents and is full of apple, raisins and walnuts. My boyfriend says it was lovely, but in my opinion I think I slightly over cooked it, the edges having a bit too much crunch.
This looks amazing, can I have some?
