For my birthday my sister bought me the Cookie Girl cupcake book Eat Me. This is my first attempt at a recipe from the book, coincidentally it’s also the first recipe in the book; The lemon and elderflower cupcakes.
These cakes were yummy yummy yummy! Made with low fat greek yogurt instead of butter, they were deliciously light and fluffy. The icing was not too much for my poor teeth either, unlike with full on buttercream or american style frosting. I think these are going to become a favourite. 😀
